Ume is our spring seasonal glaze, available through the end of July. A luminous pale chartreuse that sits right at the edge of yellow — the color of fresh-picked nanko-ume just before they ripen. Named for the Japanese plum, made to order in our East Providence, Rhode Island studio. When the season ends, Ume retires. No restocks.

Ume was designed as a seasonal complement to our six permanent glazes. It pairs especially well with Canyon and Verdigris. Canyon's warm terracotta creates a striking contrast against Ume's cool fruit tone. Verdigris is its quieter companion, two greens that feel related rather than matched.

On the plate, Ume was made for spring: asparagus, berries, snap peas, early stone fruit. It holds its own against grilled food too. Something about char against this pale chartreuse is deeply satisfying. We didn't expect it either.
