Four New Pieces
Three plates and a bowl, each one built to a chef’s brief.
These started with chefs asking us for something specific: a plate with a fully flat surface, a bowl for aguachile, a bowl to pile hashbrowns in. We prototyped the shapes, took them to Utility in Chicago to get them in front of more chefs, and revised them from what we heard. Then we brought the final versions to kitchens in Providence and Newport and had chefs into the studio. No notes this time, just one question: when can we get them?
Frame Plate
Totally flat, with a short rim.
The full surface stays level for plating, where our other plates curve gently toward the rim. The short rim keeps sauces contained and frames the food the way a frame holds a picture. It starts a flatter form language for us.
9.25" W x 0.75" H
Cradle Plate
Lifted on a short foot, with a soft, shallow curve across the face.
There’s no defined well. The curve holds a smaller portion at the center the way cupped hands would, with plenty of open space around it, for composed dishes that want negative space.
9.25" W x 1.5" H
Pool Plate
A fully flat floor inside a 1-inch wall.
The floor is level enough for a piece of fish or a plated dessert, and the wall holds whatever pools around it: crudo, aguachile, a broth poured at the table. It started as a bowl for aguachile.
7.5" W x 1" H, 14 fl oz
Moon Bowl
A low bowl lifted on a short foot, curving in one continuous sweep from rim to center with no flat floor.
Food settles toward the middle or piles up there: a small pasta course, soft polenta under a braise, dumplings in a little broth, a stack of crisp hashbrowns. Its profile comes from the base of our Moon Vase.
7" W x 2" H, 16 fl oz
